In the back of a tourist restaurant in Vinales, a Cuban women cooks ropa vieja, a traditional Cuban meet dish. In my experience, the food in the Cuban countryside was vastly better than in Havana. The farms have access to fresher vegetables and meat, and they are not as limited by rations. These restaurants only cater to tourists but I feel I discovered the heart of Cuban food in the countryside.
