Making Tofu Skin
Tofu skin is a food product made from soybeans. During the boiling of soy milk, in an open shallow pan, a film or skin forms on the liquid surface. The films are collected and dried into yellowish sheets known as tofu skin. Most of the tofu skin are made in automated factories now. It is very rare to find such small shop which is still making the tofu skin with the old technique.

I love the steam, the rows of transparent tofu skin hanging like laundry and the shallow pans moving toward a vanishing point. That red on the worker's clothes provide a pop of colour and contrast.
