With the rise of speciality coffee, a whole lot of new extraction techniques have been developed or seen a renaissance. In addition to traditional methods of brewing coffee, such as the pour-over and the French press, there is now also techniques such as the aeropress. The siphon, which uses two separate chambers, vapour pressure, vacuum and gravity to mix the coffee and seen used here by Swedish coffee roaster Jack, has made a revival after its invention in the 1800s.
