Brewing our daily cup of coffee is something most of us do everyday, in the same old ways we always have. But with the rise of speciality coffee, a whole lot of new extraction techniques have been developed or seen a renaissance. In addition to traditional methods such as the pour-over and the French press, techniques such as the aeropress have become popular. The siphon, which uses two chambers, vapour pressure and vacuum and seen used here by Swedish coffee roaster Jack, has made a revival.
