Cambodian Fudge
This Cambodian woman stirs palm sugar in this very hot cauldron outside enduring the 104F humid summer temperatures to prepare this sweet treat that results in a grainy honey coloured fudge. The local people use every part of the sugar palm tree and extracting the juice is not an easy task and tends to only occur during the dry season.
