The Festival of the Trays or Feast of theHolySpirit,takes place every4 years in Tomar,Portugal.The local population parades with the girls carrying trays on their heads.The tray is made of30 stacked pieces of bread,either in6 rows of5or5 rows of6,decorated with flowers.At the top of the tray a crown which normally contains either a white dove,symbolising the HolySpirit,or the armillary sphere,symbol of the Portuguese maritime expansion,and over the sphere,the cross of the Templar Order of Christ
