Cuy, traditional guinea pig
First evening in Cusco, Peru, jet lagged and wheezing a bit from the 330 meter elevation (10,800 ft). We knew from a previous visit that we needed to have cuy immediately upon arriving. Why? Because it's the traditional dish in Peru for celebrations. And we were very happy to be back. The place is magical.
It seems that cuy is always served whole (some locals we met said that one is generally shared among 3-5 people!) along with onion salad, boiled potatoes and a spiced potato fritter.
