Man has enjoyed the fruit of the olive tree and the taste and benefits of the oil extracted from it for many thousands of years. Few other symbiotic relationships between Nature and Man come to my mind that have lasted so long and getting stronger still. The serenity of a field of olive trees at the Golden Hour revealed to me an ancient tale of hard work and human ingenuity.
