Residents of Lofoten in Northern Norway are fortuned. Once every year – January to April – the sea provides an abundance of food when the wondering cod “Skrei” comes to play. When caught the fish is hanged to dray in the wind and the sun, resulting in a perfect and totally natural conservation. The best parts of the skrei end up on dinner tables in rich parts of the world. But way process the heads? The answer: these parts are being sold to African country’s where people cant afford better food.
