Yusheng, a salad with raw fish, is the quintessential dish of every Chinese household during Chinese New Year in Singapore. Prior to eating, there is a ritual, Lo Hei, to "bless" & toss the salad. This "blessing" involves saying auspicious wishes associated with each ingredient while pouring it over vegetables. Once done, every member at the table uses his/her chopsticks to toss the ingredients as high as possible and continue to "bless" the salad until the salad is fully and messily mixed! =)
