While en route from the Siloli Desert to the Salar de Uyuni in Bolivia, I was struck by the vibrance of these red quinoa plants. It is incredible that anything, let alone a "superfood", can thrive in such harsh desert and altitude conditions. The photo was taken from the side of a dirt road, somewhere near San Juan, shortly before the Autumn harvest.
