    Creaming adds air. Air makes it fluffy. Fluffy is better (if you prefer fluffier cake batter. Yet it is not easy to master. There is an art to it and it takes a whole of practice. Creaming is not just about combining ingredients—it's about aerating them. Bash the butter against the sides of a bowl, fold it and create little pockets of air with every turn.
