We have guests staying with us in Ella, Sri Lanka for 2 nights. Tonight we gave them a surprise dinner of South Indian "dosai". It should be "paper roast", twice the length of what you see here, but our gas burner doesn't have enough rings to give even heat all over the metal plate, so each guest gets 2 smaller ones! For those who don't know, paper roast is rather like a large savoury crepe, which we serve with a variety of sauces, vegetables and salad, making it a real fusion dish.
